i dont advise just turning it and hoping if you dont know what to listen for. i suggest you try to get a timing light off someone and see what its on first before adjusting anything.

try advancing the timing. if the timing is over-retarded it will backfire and often flame out the carby

it wont be valves hitting pistons. thats not a rattle noise. thats a sorta metal to metal clunk followed by the engone abruptly stopping then followed by a loud usually ill natured word from the driver. did you tension the chain right?

i wouldnt have bothered with a new gasket. sikaflex was invented for gemini drivers like ourselves. leave the replacement gaskets to the high rollers

you need a different tailshaft because the output spline on the 5 speed is different to the 4 speed. when i did my conversion that all i needed. everythign else bolts up.

pull the drums off and have a look and see if theres anything floating around in there. one option is that the shoes are worn out and are jsut locking onto the drum. maybe the diff mounts or rear control arm bushes are screwed and allowing movement. just get under and have a look

i lost my printout but on the dyno at tafe i ran 83 hp at 5800 and 300nm at 4800 or something close to that.
running a balanced g161z with a single 45mm DCOE weber with big valve head mildly shaved and a medium cam.
and i beat a 333ci stroked torana in kw per litre... he wasnt happy

first of all dont be so quick to blame the mechanic. the specs on which to adjsut tappets assume that the rocker arms are not work. most ppeople compensate for this by going one gauge down in the set. also if it really worries you try 20w/50 oil. and also mechanics buy opil in bulk to make it cheape...

and also the disc brake set up has a thicker axle seal then the drums... you will need to change this as well
